Homemade Fiesta Chicken Pizza Recipe


For this pizza u need

Ingredients for toppings:
1 to 1 & 1/2 cup chicken breast pieces {already cooked to your own preference. Mine was chicken tikka}
1/2 cup sweet corn or to taste {already cooked}
1/4 cup sliced black olives or to taste
1/2 cup sliced jalapenos or to taste
1/4 cup sliced green capsicum or to taste
1 teaspoon finely sliced onions {optional}
1 to 1 & 1/2 cups grated mozzarella cheese or to taste

Suggested Toppings: cherry tomatoes halved, cooked minced beef, cooked pieces of any kind of meat, sliced mushrooms, sliced green onions, guacamole, sour cream, taco sauce etc

Dough for Pizza
Plain Flour 2 ½
Oil 6 Tablespoons
Salt pinch OR to your taste
Yeast 2 teaspoons
Warm Water Just estimate
A} Mix all the dry ingredients and the oil expect warm water at this moment
B} Add warm water little by time until the dough will start to be formed
TIP: The softer dough is the better
C} Knead the dough very well for at least 10 minutes
D} Add a touch of oil to the dough
E} Roll it out to around shape as pizza and place on your greased or non- stick pizza pan/tray TIP: Please don’t make it too fat, let’s say make a medium size coz is going to rise
F} Place it somewhere warm, leave it to rise to double its size

Tomato Sauce
Tomatoes 2-3
Green chilli to your taste
Onion to taste and finely chopped
1/2 teaspoon ginger paste
1/2 teaspoon ginger paste
1 tablespoon tomato puree
Salt to taste
1/2 teaspoon Garam masala
Chilli powder to taste {if you don’t like it hot then don’t add chilli powder}

A} Blend tomatoes
B} Heat 1 or less tablespoon of oil in a pan
C} Add garlic and garlic paste
D} 1 tablespoon tomato puree
E} Add salt, garam masala, green chillies and salt to your taste {if you don’t like it hot then don’t add chilli powder}
F} When is cooked for few minutes, add the blended tomatoes and simmer to get thicker
TIP: Let it simmer till it gets thicker and all the water is gone

Mozzarella Cheese {if you have a block of cheese}
Grate cheese and put it aside

How to layer Pizza
TIP: you do this when the dough is rise on the pizza/baking tray
Dough first on the tray, tomato sauce, grated cheese, finally add all your toppings
When ready to cook, pre- heat the oven to 180 C or depending on your oven heat set
Bake for 12 minutes or until golden and crisp and the tomatoes are starting to caramelise around the edges.
