4-6 fresh tomatoes or 1 cup canned tomatoes
1 small to medium onion
1 teaspoon chilli powder
1 Garam masala powder
1 teaspoon ginger paste
1 teaspoon garlic paste
Salt to taste
1 tablespoon lemon juice
2 to3 tablespoons of cooking oil
A} Heat oil in a saucepan over medium heat.
B} Add the onions and fry until soft and translucent. Add the ginger and garlic pastes, and when they release their aroma, add all spices, then tomatoes, cook it until tomatoes are soft while mashing them / stirring. Cover and cook, stirring occasionally for about 4 to 5 minutes.
C}Simmer gently, uncovered, until sauce thickens. (Can be prepared 1 day ahead. Cool slightly. Cover and refrigerate.)
D} preferable serve warm or hot, you can serve this sauce with so many things like nachos, crisps, breads, rice, kebabs, grilled fish, mishkaki, grilled banana, fried or grilled cassava etc
