How To Cook Sweet Njugu Mawe With Coconut

Ingredients:
700g  Njugu mawe {Bambara beans {groundnuts}
1/2 cup sugar or to taste
1/4 to 1/2 teaspoon cardamom or to taste
3 to 4 tablespoons coconut milk powder or to taste
1 and 1/2 teaspoon vanilla extract

Method:
A} Clean your njugu mawe and make sure there are no stones in them
B} put them in a large pot or large mix bowl Sock them overnight. {This process will make the njugu mawe soft and east to boil}
C} Drain the dirty water and clean them again
D} Place them in the large pot, switch on the stove and bring it to boil
E} Once they are well cooked and soft, add the coconut milk, sugar, cardamom powder and vanilla. Make sure to stir now and then to avoid burning them
F} Simmer them until they are thicken up as seen in the video
G} Serve them hot, but if you prefer them cold then go ahead and serve them cold
