How To Cook Meat Yam With Coconut

Serves about 2 – 3 people

For Meat
600g – 700g meat {you can use meat of your choice}
1/2 teaspoon ginger paste
1/2 teaspoon garlic paste
Salt to taste
A} Clean the meat and put it in the sauce pan
B} Add enough water, salt, ginger and garlic paste {keep in mind you are going to cook yam with this meat broth: therefore put add enough water}
C} boil the meat until tender, not too much though

For Yam
600g Yam
1/2 Cup Coconut powder
600g – 700g boiled meat {you can use meat of your choice}
1 medium onion
Fresh chilli to taste and optional
1 teaspoon chilli powder or to taste {optional}
1 tablespoon tomato puree (if you want you can use fresh or tin tomato)
1/2 teaspoon ginger paste
1/2 teaspoon garlic paste
1/2 Garam Masala
Salt to taste
1 to 2 tablespoons Olive Oil
Water as needed to taste

A} Peel yam and cut into pieces
B} Take a pan add oil, chopped onions
C} sauté them for about 2 to 4 minutes {depending on the heat you are using}
D} Add ginger and garlic, then followed by all spices and tomato puree, cook them for about 2 -3 minutes and then
E} Add the cubes of yam mix them well.
F} Add the meat broth / soup to it, salt, mix well and close it with a lid cook till the yam are nearly cooked {halfway cooked}
G} Now add coconut liquid, make sure to mix coconut powder with hot meat broth beforehand, as seen in the video.
H} Add in the boiled meat, let it come to boil until thick gravy or the yam are soft. Switch of the flame.
I} Taste and adjust the salt to taste.
Serve with any salad of your choice and chilli if you like it extra hot

1} If the yams are still hard / under cooked, then add water and continue to cook until they are soft
2} Drain the water If the yams are soft and there’s too much water in the pot {Do this before adding coconut milk}
