Homemade Scotch Eggs

Serves 6

Ingredients:

600g minced meat (I prefer beef mince)

6 eggs {hard boiled eggs}

2 beaten Egg

2 to 3 tablespoons of dried breadcrumbs

1-2 green chillies finely chopped (Optional and if you want this extra spicy hot)

1 teaspoon ginger paste

1 teaspoon garlic paste

2 medium onions peeled and finely chopped

2 tablespoons bell pepper

Some chopped coriander to taste {optional}

1/2 to 1 teaspoon coriander powder

1 teaspoon Garam masala powder

1/2 to 1 teaspoon Cumin powder

1 teaspoon Lime powder

Chilli powder to taste (optional)

Mixed herbs

Salt to taste

Oil for deep frying

For coating scotch eggs

2 to 3 tablespoons flour (optional)

1 teaspoon Black pepper

1/2 teaspoon chilli powder or to taste {optional}

1/2 teaspoon salt or to taste

2 egg wash

250g to 3009g dried breadcrumbs

Method

A) Boil the eggs until hard (approximately 12 -15 minutes)

B) When cool, remove shells

C) In a bowl add in the minced meat, chopped onion, coriander, garlic, ginger all the spicies except coating ingredients {things} and boiled eggs

D) Mix thoroughly using hands * Marinate your mince minimum 30 minutes, or 3 to 4 hours or overnight {i prefer overnight}

E) Add salt, chilli powder and black pepper to the flour optional

F) Use the kitchen paper towel to Pat wet eggs before you wrap marinated minced meat around them

G) Completely cover the eggs with a layer of marinated mince

H) Keep your hands damp to mould it around the eggs; you can also use a cling film for easy and perfect wrapping the meat

I) dip in the beaten eggs one at a time

J) Roll in the breadcrumbs one at a time

K) Deep fry on medium heat until golden brown

L} Drain the excess oil on a Kitchen roll paper

M} Serve hot with any sauce of your choice or salads
