Grilled Ripe Plantains

Ingredients
4 Plantains
Salt and chilli or pepper to taste {optional}

Method:
A} Preheat the oven to 400°F. Line grilling rack with foil as seen in the video and coat with cooking spray or oil or butter
B}Using a sharp knife cut both ends off the plantain. This will make it easy to grab the skin of the plantains. Slit a shallow line down the long seam of the plantain, peel only as deep as the peel. Remove plantain peel by pulling back.
C}Place plantains on grilling rack, then sprinkle on a little salt and pepper if you choose to use them. Grill for about 20 to 25 minutes on a medium grill heat, turn and grill on the other sides for another 20 minutes or until golden brown and tender.
Serve them while still hot / warm with sauce of your choice, you can also serve them with grilled meat, fried fish, liver salad etc.
