Grilled Coriander Tandoori Chicken skewers: Mishkaki Ya Kuku

2 pounds of chicken breast diced in 1 inch pieces
7 to 11 skewers soaked for about 20 min

Marination for the chicken

1 tablespoon ginger and garlic paste
2 tablespoons tandoori masala
1 tablespoon paprika
1 tablespoon lemon pepper
1 tablespoon dried parsley flakes
1 to 2 tablespoons chopped coriander
Chilli powder to taste {optional}
salt to taste

A} Soak your bamboo skewers in water for at least 20 minutes
B} Wash and cut the chicken. Marinate for about 3 hours.
C} Skewer the chicken and keep aside.
D} Preheat your grill at 300 degrees and lay the kebabs on the grill for about 7 to 8 minutes turn on the other side and grill for another 7 – 8 minutes or until the chicken is cooked.
E} Serve with some salad and any sauce

Salad Recipe
1 Grated carrot
1 Medium Onion
1/2 to 1 romaine lettuce
Red chilli to taste (optional)
Salt to taste
Lemon juice / lime to taste
Green bell pepper to taste
Olive oil to taste

A} Wash and chop red onions, lettuce, fresh red chilli and grate carrot
B} Toss all the ingredients together in a medium-sized salad bowl
C} Put the salad on a serving plate
