Fried vermicelli with raisins: tambi za kukaanga Na zabibu

Ingredients:
½ of a 450g packet of vermicelli {Tambi}
2-3 cups of hot water
½ cup of sugar
½ cup raisins or to taste {washed and soaked in water}
4 tablespoons of vegetable oil
drops of vanilla essence
1 teaspoon of cardamom powder or to taste
1 teaspoon of slices of Almonds or to taste {Optional}

Method:
A} Heat oil in a deep pan and on a medium heat heavy dish heat
B} Fry the vermicelli {Tambi}, make sure you stir frequently to avoid burning them
C} once some tambi /vermicelli start turning brown remove from heat {this is how I like my tambi having two colours brown and white}. If you like your tambi all brown then Stir until all Vermicelli turns golden brown. Then stir a little more for some to get to dark brown, but do not let them burn
D} Now remove from heat and carefully pour out the excess oil.
E} Add 2-3 cups of hot water, sugar, cardamom and vanilla essence and stir to combine
F} Cook them on a medium heat or you can reduce the heat to a lower setting to allow the vermicelli and spices to cook well
G} Once the water evaporates and the vermicelli has softened {this process will take about 15 – 30 minutes, then add the raisins and almonds and stir. Leave for 2-3 minutes then remove.
You can be serve your tambi cold or warm

TIP:
If you notice the vermicelli is still hard you can add a little more water.
Don’t use too much water; otherwise your tambi will become porridge lol

Optional stage:
Switch on the oven broiler.
Pour the vermicelli in an oven proof container and cover with aluminium foil. Let the vermicelli brown a little on top to your liking. Usually takes 10-15 minutes. This process also helps evaporating any excess water.
