Delicious Mutton Curry: Mchuzi Wa Nyama Ya Mbuzi

1 mutton curry

500 gms mutton cubes
1 to 2 big onions thinly chopped
4 tomatoes pureed
1 tablespoon garlic paste
4 green chillies paste
2 tablespoon yogurt
1 inch ginger chopped
1 teaspoon red chilli powder or to taste
2 teaspoon coriander powder
1/2 teaspoon turmeric powder
1 teaspoon garam masala powder
2 cups water
1 bay leaf coconut paste
1 teaspoon
1/2 tsp cumin seeds
2 tbsp vegetable oil
Salt to taste

A} Wash and clean the mutton thoroughly in normal running water.
B} Combine the yogurt, salt, red chilli powder, turmeric powder, garlic paste and coconut paste.
C} Add the cubes of mutton in this mixture and keep aside for 2-3 hours.
D} Heat the pan and add oil.
E} Add bay leaf and cumin seeds. Sauté for few seconds
F} Add ginger and green chillies. Sauté and add onion.
G} Stir fry the onion for couple of minutes and add puree of tomatoes.
H} Mix well; add salt, coriander powder, garam masala powder and vinegar.
I} Add the marinated mutton and mix well.
J} Cover the pan and leave to cook for 10 minutes on low flame.
K} Uncover and add water. Higher the flame for 2 minutes.
L} Adjust the salt and red chilli powder.
M} Fry continuously until mutton starts turning into brownish red in colour.
N} Again lower the flame and cover the pan.
O} Bring the mixture to boil and cook until mutton is tender.
P} Serve hot with any bread like; roti, chapati, naan or steamed rice.

Stir continuously at the time of adding mutton, this way the meat will start turning into nice colour.
